Raw – Day 2

People who follow a strict full time or occasional raw food diet know all about “soaking your nuts”. ????There are a lot of nuts and seeds used in raw meals, and raw foodists believe that they can cause digestion problems, and that our bodies can’t fully access all the nutrients. So nuts and seeds are soaked, then either used in this moist, germinated state, or dehydrated to get them back to crunchy. Or they can be rinsed periodically over a few days to get them to sprout, making them even more nutritious. This soaking process is called activation.

This has been debunked by some, but in the interest of authenticity, all the nuts and seeds in my recipes were activated (except flax and chia, which are used as binders).

Breakfast (pictured) was a coconut chia pudding with a little raspberry compote stirred through, and a green juice.

Lunch (pictured) was a raw tortilla (zucchini and seeds blended to a batter then “cooked” in the dehydrator) spread with sunflower pâté and wrapped around salad. I dried the tortilla a bit too long and it was crispy and fragile but a water spritz returned it to a soft and pliable state. Dinner tonight will be the same as lunch yesterday – a raw burger on thyme bread.

In between meals if I’m peckish, I’m snacking on carrot sticks with one of the seed pâtés I made, or raw sweet treats that are always in the fridge – nut bites and bounty bars.
